Peningkatan Kinerja Internal Supply Chain Management pada UMKM Tahu menggunakan Quantitative Value Stream Mapping

This study aims to analyze the performance of internal Supply Chain Management and minimize waste in the tofu production process at CV. Tahu Barokah Jaya, Sukorejo, Pasuruan, East Java, using a quantitative Value Stream Mapping (VSM) approach. The manual-based production process causes material flow imbalance and significant waiting times. Data were collected through direct observation, interviews, and time study over three production days. Current state mapping reveals a process time of 337 minutes and waiting time of 26 minutes, resulting in a lead time of 363 minutes per batch, exceeding the ideal takt time of 240 minutes by 51%. The dominant wastes identified are waiting (particularly 10 minutes between grinding and boiling), transportation, and motion. Improvements were proposed through Future State VSM by rearranging the facility layout into a linear flow and introducing trolleys for material handling. Projected results show a 54% reduction in waiting time to 12 minutes, lead time compressed to 349 minutes, and Value Added Ratio (VAR) increased from 92.84% to 96.56%. The novelty of this research lies in the comprehensive quantitative full-stream VSM application on a household-scale tofu MSME. This study demonstrates that the quantitative VSM approach effectively enhances operational efficiency and internal supply chain responsiveness for agri-food MSMEs.
